Microwave Chocolate Pudding & Star Fruit Chips

I hope your Christmas has been full of wonder and very blessed!

I found a recipe for star fruit chips and thought that sounded interesting!  So I made some, and in looking through a gluten-free recipe book I have, I found some quick easy microwave chocolate pudding.  That caught my attention and I thought that the cute little star chips would be a fancy little garnish in some chocolate pudding!

For those who are gluten-free, pudding is a questionable food, depending on the ingredients used.  When I buy pudding, I play it safe with Cozy Shack brand that is clearly labeled gluten-free.  But with this recipe, I may never buy ready-made pudding again!

I whipped up a batch, and voila!  Here we are with another delicious gluten-free dessert option.  (Of course, they don’t have to be served together!)

Star Fruit Chips

* 2 firm ripe yellow star fruit
* 2 cups sugar (you would likely be able to use another sweetener of your choice, such as honey, maple syrup or stevia)
* 2 cups water

* Slice star fruit crosswise. *

* Bring sugar and water to a boil in a heavy saucepan, stirring until sugar is dissolved.  Add star fruit, then remove from heat and let stand, uncovered, 15 minutes. *

* Pour star fruit into a sieve set over a bowl and let drain 15 minutes. *

* Preheat oven to 200 degrees F.  Place a liner or some parchment paper on a cookie sheet.  Arrange star fruit slices in one layer on paper.  Discard any broken pieces.  Bake until dry, one hour to one hour and fifteen minutes.  Immediately transfer chips to a rack to cool. *

These chips taste similar to dried apricots to me.  Something unique to try!

Now for the uber easy, quick, and delish…

Microwave Chocolate Pudding

* 1/4 cup unsweetened cocoa powder
* 2 Tbsp. cornstarch
* 1 1/2 cups milk
* 1/3 cup sugar
* 1 tsp. vanilla
* 1/8 tsp. ground cinnamon

{The addition of cinnamon in this makes it extra tasty with a little zip of spice.  Also, you could use a form of powdered stevia, such as Truvia or In The Raw brands in place of the sugar.  If you do, then follow directions on the bag for replacing sugar.  You may also wish to try using almond or coconut milk.}

* Combine cocoa and cornstarch in medium microwavable (preferably glass) bowl.  Gradually whisk in milk until well blended.

* Microwave on HIGH 2 minutes, stir; Microwave on MEDIUM-HIGH (70%) 3 1/2 to 4 1/2 minutes or until thickened, stirring every 1 1/2 minutes.

* Stir in sugar, vanilla and cinnamon.  Let stand at least 5 minutes before serving, stirring occasionally to prevent skin from forming.  Serve warm or chilled.
