I am not a morning person. Not even a little bit. I don’t understand how people can hit the ground running. I need slow wake ups, and cups of coffee, and my husband making pancakes in the kitchen. Now, I’m super lucky and get to have that most weekends, but lets be real, the week just doesn’t work like that. We homeschool, but I’m also a substitute teacher, so we have plenty of get-out-the-door mornings around here. These are the muffins you want on hand for just such a morning!
Banana bread! and chocolate chips! and streusel topping! They make mornings better.
Here’s what you need:
- 1 3/4 cup white whole wheat flour (I prefer it over regular whole wheat flour, it’s lighter but just as good for you!)
- 1 1/2 teaspoons baking soda
- 3/4 teaspoon salt
- 3 large eggs
- 1/2 – 3/4 cups sugar
- 3 mashed ripe bananas (I like to use frozen ones, you know, the ones that are about to go bad?)
- 3/4 cup vegetable oil
- 1/4 – 1/2 cups chocolate chips
- ½ cup flour
- ¼ cup brown sugar, packed
- ½ stick butter
- ½ tsp ground cinnamon
- chopped pecans (optional)
Preheat oven to 350. Mix together wet ingredients, dry ingredients and streusel in separate bowls. Blend the wet and dry ingredients together into a batter. Lightly grease a muffin pan and fill cups 3/4 full. Top with struesel. Bake for 20-25 minutes or until a toothpick comes out clean.
These muffins have everything! Whole wheat flour, bananas and not a ton of sugar for mom and dad, chocolate chips for the kids, and streusel because why not? They also freeze beautifully. Make a double batch, throw them in the freezer and grab one on those busy mornings. Scramble up some eggs if you have time and you have a great breakfast without even having to be all the way awake! I kid…don’t scramble eggs if you’re still sleepy. Burns don’t help mornings.
