It’s August and 90+ degrees out and even if I’m still in a tiny bit of denial, I know Fall is just around the corner. Although I hate to see summer come and go so quickly, I’m starting to get excited for the new season. I’m thinking I’m not the only one?!?!
Being from Southern California, I don’t get to see a huge change in the seasons. But, we So. Cal girls do our best to make up for the lack of pretty trees by decorating our homes in warm colors, pinning Fall everything on Pinterest, and incorporating the seasonal flavors in our cooking. My favorite things about Fall? Cute scarves, beanies, and great boots. Starbucks Pumpkin Spice Latte (is there anything better?). Comfort food like yummy roasted butternut squash and warm apple pie. Oh, and THIS recipe for a Pumpkin Pie Smoothie.
Not only does it taste great, but it’s incredibly filling as well. As an event and sweets stylist, I sometimes work long days with very little time to sit down and eat a meal (Wait a second…that’s me even when I’m NOT working, chasing my 19 month old son)! This smoothie paired with some whole grain toast is the breakfast of champs and keeps me full for hours.
PUMPKIN PIE SMOOTHIE
Ingredients:
Makes 2 Servings
1/2 Banana (preferably frozen)
1/3 can of Pure Pumpkin Puree
1/2 cup of Low Fat Greek Yogurt (I use plain, but vanilla is delicious too)
3/4 cup of Low Fat Milk (Non Fat and Almond milk work great too)
5-6 shakes of Pumpkin Pie Spice
1 Tsp. Vanilla Extract
8-10 Ice Cubes
Optional-If you like it a little sweeter, 1-2 Packets of no calorie natural sweetener (like Stevia) or 1-2 Tbsp. of honey. You can also throw in some ground Flax Seed for an extra nutritional boost.
As you can see I added a little cool whip to this and sprinkled some more pumpkin pie spice on top. NOW it tastes like Pumpkin Pie. What can I say? I’m pregnant. Cut me some slack, okay? =)
