We are the worst leftover eaters ever.
Some things make great leftovers. Lasagna. Pasta Salad. Goulash. These things get better as they sit and are reheated.
But everything else. Not so much.
Summer cuisine includes a lot of grilling around here. That means a lot of simple proteins on the grill. Chicken. Pork. Steak.
Whatever is left over may not be so great stuck in the microwave and reheated, BUUUT….
Made into something new, they can be AWESOME. And EASY!
Chicken
I love BLTs! Cook a little extra bacon at breakfast and use your leftover chicken and avoid any need to cooking in a hot kitchen (like when mine was 87 degrees today!!). Would seem perfect for a picnic!
Chicken Quesadillas make a quick lunch or dinner. This is a great summer leftover because with a quesadilla maker (like mine!), you don’t have to heat up the kitchen, they cut easily with a pizza cutter and the kids gobble them up with a dallop of sour cream or salsa.

Pork
These Pulled Pork Dippers are a great way to use up leftovers of a favorite summer crowd pleaser, Pulled Pork.
Or is you have pork chops, cubed them up and add them to this Pork Fried Rice.
Steak
We like our grilled steaks with some pink or red. This leaves some extra room to re-heat/cook the leftovers without turning them into rubber.
I love this idea for Grilled Philly Cheese Steak Pizza. And it is healthy to boot!
Fajitas are a great way to quickly use leftover steak or chicken. Go traditional or try something a little different, like these Baked Steak Fajitas.
Don’t let those yummy, grilled proteins go to waste in your fridge! Use them for creative, new dinners that will quick, easy and delight all those hungry loved ones! In fact, you may find these are SO good that your purposely cook a little extra one night to have leftovers the next!!
