It’s finally May and that means summer is just around the corner. One of my favorite aspects of this time of year is the variety of fruits available. Winter is impeccable for squash consumption, but it is about this time of year my heart (okay more so stomach) yearns for watermelon. I love the sweet, juicy hard skinned fruit. I could easily sit down and consume half a melon and be perfectly content with it. However, one must practice self control.
This drink is one of the many ways I enjoy watermelon in the summer. It is light, yet creamy, but contains no dairy. It’s gluten free, contains only natural sugars and will cool you off when the humidity it overwhelming.
You can make it in larger batches but this makes two delectable servings.
One for you and one for a friend.
Watermelon Peach Coconut Breeze
2 cups of watermelon cubed
1 cup of frozen peaches
1 cup of coconut water
Place all ingredients into a blender and blend until smooth.
