TiPs for TaKiNg ThInGs BeAcHsIdE
- Leave the heavy cooler with wheels at home. There is nothing worse than trying to get one of those across the sand. Instead, get an insulated basket or bag and pack a lighter meal. Here are a few of the favorites I found at www.KeepYourCooler.com.
- Go multipurpose with your utensils! I love these small, bamboo sporks I found at www.greenfest.com.
- Keep the menu light yet satisfying! Here are a few I picked up from a Real Simple article, June 2009.
Roast Beef and Cheddar Roll-Ups
4 oz. cream cheese, softened
2 Tbsp prepared horseradish
4 large tortillas
1 head of romaine lettuce, tough ribs removed
8 oz. thinly sliced roast beef
4 oz. Cheddar cheese, thinly sliced
In a small bowl, combine the cream cheese and horseradish. Spread evenly over each tortilla.
Layer the tortillas with lettuce, roast beef and Cheddar and roll up.
Tomato and Cantaloupe Salad
1 pint of cherry tomotoes, halved
1/2 cantaloupe, cut into 1-inch pieces
1/4 cup of fresh mint
2 Tbsp of extra-virgin olive oil
Kosher salt and pepper
In a large bowl, gently toss the tomatoes, cantaloupe, mint, oil and 1/4 teaspoon of each salt and pepper.
