i do not care for creamy soups {unless new england clam chowder made by a chowda’ house}. i do not eat potatoes.. matter of fact, i have purchased less than 10 bags of potatoes since moving out of my parents home at 17. so, this is quite unique that i am sharing an amazing Ham & Potato Creamy Soup recipe that i adapted from one on AllRecipes.com tonight.
Gluten Free Ham & Potato Creamy Soup
chop up the following vegetables and add to 3 1/2 cups of water in a medium sized saucepan:
4 large potatoes
1 -2 cups of ham
2 carrots
2 celery stalks
1/2 an onion
bring to a boil & then turn to medium heat for 10-15 minutes until vegetables have softened.
while your vegetables are cooking, add 5 tablespoons of butter to a large pot, melt slowly on low heat add 5 tablespoons of gluten free flour, whisk together. then add 2 cup of almond milk very SLOWLY. continue to whisk. once it thickens, add 1/2 cup of your favorite cheese
once vegetables are done, remove 2/3 of a cup of the liquid, add 2 boullian chicken cubes {i used 2 teaspoons of Watkins Chicken Brother mix}, 1/2 teaspoon of black pepper
add vegetables to cream sauce and slowly stir to combine all ingredients. turn off the heat & serve!
