Can I be honest? I’m 37 weeks pregnant today and I’m sooooo over it! It is getting harder and harder to devote the energy my 4 year old needs, and Netflix is making more and more appearances in our day.
We were in desperate need of an easy Mommy-Daughter project.
This recipe fits the bill perfectly!
Seriously…2 ingredients and you have muffins! And, you can totally justify having them for breakfast because using canned pumpkin is better than using oil, right? Yes. Yay, fiber! Right…
Here’s how they come together.
Pour your cake mix into a bowl. We went with Spice Cake because I think pumpkin and spice cake are made for eachother, but you use whatever you like.
Scoop in your pumpkin.
Lots of scooping…
Mix it all up. At first it’s going to seem like there is not enough pumpkin to moisten all the cake mix. I promise, it will work. It’s a bit like a science experiment, all of a sudden it just comes together!
Taste test, obvs. Bonus: No eggs = guilt free tasting! Woot!
Scoop into a muffin tin. I greased and floured my tin to avoid a repeat of this disaster. It was probably overkill, but my muffins came out beautifully!
