Merry Christmas Eve... a realization of so much no

Merry Christmas Eve... a realization of so much not done.

Christmas photos 📸 not taken.
Christmas 🎄cards purchased, but not written in (Sorry!! We've received so many lovely ones...)
Gifts 🎁 purchased too late that won't arrive on time.
Gifts 🎁 purchased weeks ago... still won't arrive on time.
No Christmas Eve in-person service ⛪️ with the kids.
No family visiting and no traveling.

So, I made my Grandma Harris' 👩🏻‍🦳chocolate covered coconut balls, kids are relaxing, the house is filled with twinkling Christmas lights and we will celebrate the birth of our Savior 🙏🏻 tomorrow.

This year has been wild 🤪... but we've used the extra time to teach these 3 kids more about who God is while going through a daily bible study (thanks to @merecpete23 for the suggestion of New Morning Mercies by @pauldavidtripp ).

This 1-1.5 hours every evening has helped us dive deeper... while challenging my Bible 📖 knowledge, understanding of scripture and lots of chats 💬 with my dad when I get stuck.

His grace is sufficient and His mercy is a gift. Thankful that our kids know what a blessing it is to know God, to accept that our days are like vapors -- here one moment and gone the next. To use this time wisely and be thankful no matter the circumstances.

Gluten and Dairy-Free Chocolate Chip Cookies 🍪! After several trial and errors, I can officially proclaim that these are the BEST 🙌🏻😍👅 “healthy” chocolate chip cookies I have ever made.

And there’s 1️⃣ secret ingredient, that makes them taste so unexpectedly delicious.

INGREDIENTS⠀
1 cup coconut oil @barleans (or softened butter)
1 1/2 cup coconut sugar @betterbodyfoods
1 teaspoon molasses (optional)
2 teaspoons vanilla extract⠀
1 teaspoon apple cider vinegar @bragglivefoodproducts
1 egg, lightly beaten vital
2 cups of 1-for-1 gluten-free flour mix @kingarthurbaking
1 teaspoon baking soda⠀
1/4 teaspoon unrefined sea salt⠀
3/4 cup dairy-free dark chocolate chips @enjoylifefoods
OPTIONAL: 3/4 cup finely chopped walnuts or pecans⠀

I have been sick with autoimmune and underlying diseases for 11 years. Walked alone as a single mom with 2 small kids for 7 of those.

I know uncertainty. I’ve lived it, breathed it, fell victim to it and was mesmerized by it.

Through the mysteriousness of life and the inability to control tomorrow, I have learned to accept we live in a fallen and broken world.

Where good things happen to bad people.

Where bad things happen to good people.

Where life seems unfair, because it is.

Where things don’t always make sense and we may not ever get to know why.

But what I do know, it that I am safe. Surrendered to the King of Kings. I am held in His glory, mercy and grace. New every morning.

Great is his faithfulness.

For I know who holds tomorrow and that is all I need.

Pumpkin spice everything 🎃😍🎃😍... and as long as my body agrees 💁🏻‍♀️, I’m in. Which means gluten 🌾 free, dairy 🐮 free and naturally sweetened. This guiltless recipe for our Pumpkin Pie Smoothie is so quick and delicious.

1/4 cup canned pumpkin purée
1/4 cup raw pecans
1 cup ice cold water
2 teaspoons flaxseeds @anthonysgoods
1 frozen banana
2 or 3 organic pitted medjool dates @terrasoul
1/4 teaspoon cinnamon
1/2 inch knob of fresh ginger
1/8 teaspoon nutmeg
4 ice cubes

Want your Pumpkin Pie Smoothie thicker? Just toss in a few more 🧊 ice cubes.

Top with a little pumpkin pie spice and some coconut whipped cream. 😋😋

To Lenny, on your 37th birthday.

You are a dream come true. A knight in shining armor. An authentic, good-hearted, joyful man that loves life and our family.

Without hesitation, you love without seizing. You fill in the gaps, carry my struggle, hurt and autoimmune diseases on your shoulders while being dedicated to seeing me smile every single day.

I prayed specifically for God to be working on a man that would say yes to all of my messiness... a divorce that rocked me at age 30, 2 children without a dad present, an entrepreneur mind that always has new ideas, a desire to homeschool these kids and to raise them according to scripture... oh, and let’s not forget about my driven, intense personality that can be a bit much.

After years, I thought God wanted me to be single. I laughed at how much my life was and that no one would ever fit us or want us.

Then, you arrived.

You are a blessing and a true hero to all of us. I am humbled that you found me, chose me and continue too every single day. I hope that I can bring you just a small portion of what you have given to me.

I am honored to be your wife and to choose every single day to be “all in”. Never could I have imagined how good life would be.
